1
tbsp
lemon juice
optional, helps with setting
Instructions
Prepare the Plums
Wash the plums, cut them in half, and remove the stones.
If some stones are difficult to remove, cook the plums first and take them out later.
Start Cooking
Place the plum halves and water in a large heavy-bottomed pan.
Simmer over medium heat for 15 minutes until the plums soften.
Add Sugar
Add the sugar to the softened plums.
Stir continuously over low heat until the sugar completely dissolves—avoid boiling at this stage.
Bring to a Boil
Increase the heat and bring the mixture to a rapid boil.
Let it boil vigorously for 10–15 minutes, stirring occasionally.
Check the Set
Test the jam by placing a small spoonful on a chilled plate.
If it wrinkles when pushed with a finger, it’s ready.
If not, boil for another 5 minutes and test again.
Jar the Jam
Turn off the heat and let the jam stand for 5 minutes to settle the fruit.
Carefully ladle into warm, sterilized jars.
Seal immediately and let cool completely.
