Ingredients

  • Fresh or frozen blueberries: 4 cups thaw/drain if frozen
  • French vanilla cake mix: 1 box 15.25 oz
  • Clear soda like Sprite: 12 oz 1 can
  • Grass-fed butter or dairy-free: 1 cup, melted (optional)
  • Vanilla ice cream: Optional for serving

Instructions

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a baking dish with non-stick spray.
  • Evenly spread fresh blueberries across the bottom of the dish. Don’t worry if they look plain—they’ll become bubbly and sweet while baking.
  • Sprinkle the entire box of French vanilla cake mix evenly over the blueberries. Do not stir. Stirring will turn it into a soggy cake instead of a crusty cobbler.
  • Slowly pour clear soda (like Sprite) over the cake mix, trying to moisten as much of the dry mix as possible. Again, do not stir.
  • Bake in the oven for 45 to 60 minutes. Start checking at 45 minutes—50 minutes is usually ideal, but ovens vary.
  • The top should be golden and slightly crisp. If you prefer a deeper golden color, broil for 1–2 minutes at the end.
  • Let the cobbler cool for 10 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream on top.
